OUR BAR:




Our mixologists were educated at the prestigious ITSBS (Intergalactic Tweak and Savor Bartending School) and trained in DRINC technology (Distillation and Replication of Interesting Nonalcoholic Cocktails).

They blend exotic alien extractions into wild and tasty concoctions - both alcoholic and alco-null. Proud members of the UFP (United Federation of Pyrotechnics) they have devised some "impressive" combinations for the more adventurous imbiber.






OUR PHILOSOPHY ON MIXED DRINKS


We do not store mixed drinks in our bar bottles, so I do not have a recipe for Kanar or Saurian Brandy. We prefer to find Terran products that resemble the Star Trek ones and use them as INGREDIENTS in our cocktails.

The reason for this is twofold: 1) straight alcohol can be left in the bottle indefinitely without refrigeration and 2) we use the alcohol in the bottle to mix multiple cocktails. For instance, we use Saurian Brandy in six different drinks, just as it was used in conjunction with Targ Milk and Denevian Mead to prepare the Prakal II Green Drink Guinan served to Data in TNG: In Theory.

Ferengi Rule of Acquisition 163: A thirsty customer is good for profit, a drunk one isn't.

Much of the food and drink seen on-screen was made using unappetizing or inedible ingredients because it was not meant to be palatable, or even eaten, it was meant to look like whatever the script called for.

Since we consume what we serve, and we want to enjoy it, we spent a lot of time devising drinks that would look like what was seen on-screen but actually tasted good!

It was also important to us that the drinks be unusual; in other words, not what most Americans ordinarily consume whether they prefer alcoholic or non-alcoholic concoctions. Fortunately, unusual ingredients are easily available to us but they may be hard to find for people who live in remote areas. While some are available online, state laws may prevent you from importing them. What you cannot find, you can make, using a book like this one, Infused by Susan MacNeal

A few of the recipes below are common cocktails with the names of the ingredients changed to "alien" names; the rest were developed by us to use the ingredients we wanted to serve. What we usually did was take a common recipe and change one ingredient. For instance, the Cool Blueblood Martini is a classic martini made with Magellan gin which happens to be a light blue color. Using this method, you can create your own cocktails to suit your own tastes.

KC didn't like the term "virgin" - it connoted, for him, visions of Shirley Temples and Kiddie Cocktails which he refused to serve, so he coined the term "ALCO-NULL" which is what we now use. Please give him credit if you choose to use it.

All of the alco-null recipes were developed by us. We took non-alcoholic versions of the ingredients (for instance elderberry syrup instead of elderberry liqueur) and played around with the proportions until it tasted good. They are as complex as the alcoholic version, not merely the alcohol-free components of the cocktail.

Finally, it was important to us that all our guests find something acceptable to drink regardless of their dietary restrictions so in addition to the alco-null versions of most cocktails, we also served a selection sugar-free and low-calorie beverages. All of these were also given alien names and the labels on the bottles were covered with custom made labels created by John Harrington of Cedar Street Studio .

Below I have translated a small portion of our recipes so that Terrans can use them. The recipes assume a basic knowledge of mixing drinks, such as how to use a cocktail shaker, stir a drink, and build a pousse-café. All our teas come from Arbor Teas . Most of the flavored syrups came from Monin (the others were custom made, recipe below). All other ingredients can be found using an Internet search. It's been seven years since our last event, and some things may have been discontinued. If you need help finding an ingredient, please contact me.

BASIC RECIPES (you will need these for some of the recipes below)


FLAVORED SIMPLE SYRUP (*)

Combine 2 T. flavoring ingredient with 8oz. water in small saucepan and bring to a boil.
Remove from heat, cover, and let stand 20 minutes.
Strain into glass jar and add 1 c. sugar.
Cover and shake gently until dissolved.
Refrigerate up to one month.

INFUSED ALCOHOL

Macerate ingredients for the amount of time indicated. Strain into clean glass container. Refrigerate and use within 3 days.

FRUIT and VEGETABLE EXTRACTS (+)

Peel fruit/vegetable, chop into 1/2-inch pieces and puree in blender or processor.
Strain through fine strainer or nut-milk bag.
Refrigerate up to 3 days.

ARCHER's COMET (Terran) at Quark's Qantina



Fire and ice combine in the intergalactically famous Archer's Comet!

ALCOHOLIC version
1/2 oz Molly's Irish cream liqueur
1/2 oz Goldschlager
1 drop Stroh's 80-proof

ALCO-NULL version
1/2 oz Irish cream syrup
1 drop cinnamon extract
1/2 oz schplict (cream)
1 marshmallow
1 drop Stroh's 80-proof

Layer in order given. Light Stroh's on fire!
(for alco-null version wedge marshmallow in top of glass and drop Stroh's on top)
Light Stroh's (alcohol will burn off top of marshmallow and toast it slightly)
Garnish: sprinkle with cinnamon to create sparks (and a mess on your counter)
This WILL make the rim of the glass HOT! Wait a few minutes before consuming.



ANDORIAN ICEBERG at Quark's Qantina



A cooling concoction of Andorian mint vodka, risenberry vodka, and rokassa juice - if you like mint and red berries, you'll love this.

ALCOHOLIC version
simple syrup
finely crushed blue mint candies
2 oz Risanberry vodka (Ciroc red berry)
2.5 oz white rokassa juice (white cranberry juice)
1/4 oz Andorian mint liqueur (Phillips 100 blue mint)

ALCO-NULL version
simple syrup
finely crushed blue mint candies
1/2 oz mint syrup (*) with a drop of blue food coloring added
3 oz Vitamin Water Zero
1 drop wild strawberry extract
1 drop cherry extract
4 drops peppermint extract

Rim glass with simple syrup and roll in blue candies
Combine all ingredients in shaker with ice.
Shake vigorously for 10 seconds
Strain into Chilled Glass.
Garnish: none



ANTAREAN GLOW WORMHOLE at Quark's Qantina



Let this strong complex fuel redolent of lavender flowers, orchard fruit and vanilla katterpod launch your taste buds through time and space.

ALCOHOLIC version
1 oz Katterpod vodka (vanilla vodka)
2 oz Antarean Glow Water (Vermont Spirits lavender-pear vodka)
1/2 oz Papalla syrup (lavender syrup)
splash of lemon juice
dash Spican bitters (lavender bitters)
Necti (club soda)

ALCO-NULL version
2 drops Katterpod extract (vanilla extract)
2 oz Glow juice (pear juice)
1/2 oz Papalla syrup (lavender syrup)
2 oz Saurian tea (pineapple green tea)
dash Spican bitters (lavender bitters)
Necti (club soda)

Combine all ingredients in shaker with ice.
Shake vigorously for 10 seconds
Strain into large glass.
Garnish: pineapple chunk on spican gem pick and lite cube



BLOODWINE MARTINI (Klingon) at Quark's Qantina



The earthy flavor of house-made bloodwine vodka, infused with rokeg bloodroot, blended with a touch of sweet prometheus nectar and a squeeze of tart jacarine juice is not for the faint of heart.

ALCOHOLIC version
1 oz bloodwine (beet vodka (macerate 3 raw beets, peeled, in 750ml vodka for 3 days))
1 oz organic Prairie vodka
1 tsp. lemon-lime juice
1/4 oz simple syrup
1 drop targhagon extract (tarragon extract)

ALCO-NULL version
1 oz bloodroot juice (beet juice)
1 oz lemongrass green tea
1/4 oz lime juice
1/2 oz simple syrup
1 dropper gin flavoring
2 drops targhagon extract (tarragon extract)

Combine all ingredients in shaker with ice.
Shake vigorously for 10 seconds
Strain into Chilled Glass.
Garnish: 3 lemon wheels on submerged toothpick



BAJORAN FIRECAVE MARGARITA (very hot) at Quark's Qantina



Hair-raising heat tempered by cool citrus. Made with house-infused smoked rekja syrup, silverstar spirit, fire orange schnapps and lime-juice.

ALCOHOLIC version
orange flower honey
green rekja (jalapeno) flakes
1/2 oz smoked rekja (chipotle) simple syrup (*)
1.5 oz silver tequila
1 oz firecave spirit (blood orange liqueur)
1/4 oz simple syrup
1/2 oz lime juice
Habanero bitters to taste

ALCO-NULL version
orange flower honey
green rekja (jalapeno) flakes
1/2 oz smoked rekja (chipotle) simple syrup (*)
1 oz deka tea (berry-orange tea)
1 oz uttaberry tea (raspberry green tea)
1/2 oz simple syrup
1/2 oz lime juice
1/4 t. tequila flavoring
Habanero bitters to taste

Rim half of glass with honey, then roll in green pepper flakes.
Place jumbo ice cube in glass
Combine remaining ingredients, shake well, and strain into glass

CARDASSIAN SUNSET (Shipyard Bar) at Quark's Qantina



A creamy pousse café with strawberry and orange overtones made by layering risanberry liqueur, papalla brandy, apha-currant juice and schplicht.

ALCOHOLIC version
1/4 oz Papalla Brandy (Parfait Amour)
1/4 oz Risanberry liqueur (strawberry liqueur)
1.5 oz alpha-currant juice (tangerine juice)
3/4 oz schplict (cream)
2 wild risanberries (small wild strawberries)

Place straw into glass
Build (as for pousse café using back of spoon) in order given.
Drop wild risanberries through schplict (cream)



CYLON COCKTAIL (Battlestar Galactica) at Quark's Qantina



Made from sweet Oblique, fruity Seduction Spirit, and tangy papalla brandy, this mixture will inure you to the dangerous Cylons.

ALCOHOLIC version
2 oz Oblique (Damiana liqueur)
2 oz Seduction spirit (Ty-Ku)
1/2 oz Papalla Brandy (Parfait Amour)
Necti (club soda)
Cylon eye (amarena cherry)

Combine first three ingredients in shaker with ice.
Shake vigorously for 10 seconds
Strain into glass
Top with Necti (club soda)
Garnish: Cylon eye (Amarena cherry)



HOMETREE BANSHEE (Pandoran) at Quark's Qantina



Utu mauti puree, episoth syrup, and schplicht combine to create a creamy banana and maple flavored drink to refresh any Na'vi pilot.

ALCOHOLIC version
2 oz Utu Mauti puree (baby bananas)
2 tsp maple syrup
1/2 oz Utu Mauti spirit (banana liqueur)
1.5 oz Hometree Brew (Vermont Spirits milk vodka)
2 oz schplict (cream)
1 dropper maple bitters
4 drops walnut bitters

ALCO-NULL version
2 oz Utu Mauti puree (baby bananas)
2 tsp maple syrup
2 oz targ milk (coconut milk)
2 oz schplict (cream)
1 dropper maple bitters
4 drops walnut bitters

Combine all ingredients in shaker with ice.

KLINGON k'ROWN at Quark's Qantina



This noble combination of potent k'Rown Black Label whiskey, fire orange schnapps, and black lime is worthy of any Great House. Qapla'!

ALCOHOLIC version
1.5 oz k'Rrown Royal Black Label whiskey
3/4 oz blood orange liqueur
1 oz black lime tea
1/4 oz black lime simple syrup (*)

Combine ingredients in shaker with ice.
Shake vigorously for 10 seconds
Strain into glass
Garnish: black lime slice



KOLINAHR NEGRONI (Vulcan) at Quark's Qantina



A strong drink for a strong mind smoothly blended from Kolinahr Cynar, Triskelion whiskey, and sweet vermouth.

ALCOHOLIC version
1 oz Cynar
1/2 oz Jameson's Irish Whiskey
1/2 oz sweet vermouth
4 drops orange bitters

Fill glass 3/4 full with ice.
Layer in order given.
Stir.
Garnish: none



KREETASSAN MEAD at Quark's Qantina



Don't eat in front of a Kreetassan! But, you may drink this nectar redolent of tart tarran fruit, sweet panopyra spirit and Kreetassan spice.

ALCOHOLIC version
1.5 oz grapefruit juice
1.5 oz honey liqueur
1/2 oz allspice simple syrup (*)
1/2 oz lime juice

ALCO-NULL version
1.5 oz grapefruit juice
1.5 oz orange blossom honey
1/2 oz allspice simple syrup (*)
1/2 oz lime juice

Combine ingredients in shaker with ice.
Shake vigorously for 10 seconds
Strain into glass
Garnish: dried persimmon and 2 goldenberries



KTARIAN MARGARITA at Quark's Qantina



An unusual margarita with a Ktarian chocolate twist and a slight rekja kick.

ALCOHOLIC version
1.5 oz silver tequila
1 oz white crème de cacao
2 dashes chocolate bitters
cayenne flavor extract to taste

Combine ingredients in shaker with ice.
Shake vigorously for 10 seconds
Strain into glass
Garnish: fresh chile pepper and raw cacao bean



LANGOUR COCKTAIL at Quark's Qantina



House favorite. Tropical chee'lash and moba purees with a touch of nutty moolt.

ALCOHOLIC version
4 oz guava juice
1 oz mango puree
1.5 oz Langour (Alize Rose)
1/4 oz orgeat

ALCO-NULL version
4 oz guava juice
1 oz mango puree
1/4 oz lime juice
2 drops almond extract
2 drops guava extract

Combine ingredients in shaker with ice.
Shake vigorously for 10 seconds
Pour WITH ICE into glass
Garnish: lite cube and 3 slices guava



LEELOO's PERFECT COCKTAIL at Quark's Qantina



ALCOHOLIC version
2 oz Xtabentun
1/4 oz lime juice
1/2 oz Amaretto
1.4 oz simple syrup
dash grapefruit bitters
1 drop cayenne extract

Combine ingredients in shaker with ice.

LITTLE GREEN GAMZIAN at Quark's Qantina



Bitter-sweet Gamzian green wine served as a carbonated cocktail.

ALCOHOLIC version
1 part Gamzian wine green (Zen green tea liqueur)
2 parts Calaman sherry (champagne or prosescco)

ALCO-NULL version
1 part strong green tea
2 parts Necti (club soda)

Layer as written.
Garnish: squiggly straw with 2 slices dried kiwi



ORION PHEROMONE BOOSTER at Quark's Qantina



The Orion's secret: Orion gin, fruity Seduction Spirit, and fizzy Prosecco will help enslave your suitors. Strong and green, just like an Orion.

ALCOHOLIC version
1.5 oz Orion gin (Bulldog gin)
1.5 oz Seduction spirit (Ty-Ku)
Calaman sherry (champagne or prosescco)

Place round ice cube in glass
Layer spirits over ice
Top with Calaman sherry



RA'TAJ REVIVER (Klingon) at Quark's Qantina



Wake up your senses with this mix of a coffee-like essence of raktajino spiked with rulot vodka and mixed with Irish Cream. Drink of choice for Miles O'Brien, and our staff, too!

ALCOHOLIC version
2 oz Raktjino (Illy issimo caffé )
2 oz Molly's Irish Cream
1.5 oz Luksusowa vodka
dash chocolate bitters

ALCO-NULL version
2 oz Raktajino (Illy issimo caffé )
2 oz schplict (cream)
1.25 oz simple syrup
5 drops Irish Cream flavoring
dash chocolate bitters

Combine ingredients in shaker with ice.
Shake GENTLY for 10 seconds
Strain into glass
Garnish: coffee caramel on Klingon sword pick



RED TORIAN at Quark's Qantina



This strong bitter-sweet citrus and spicy black rekja concoction might brainwash you, but please don't spill it.

ALCOHOLIC version
1.5 oz Aperol
1/2 oz Campari
2 oz Prometheus Springs pomegranate black pepper water
1/2 oz black pepper simple syrup (*)
1/4 oz lemon juice

ALCO-NULL version
1 oz tangerine juice
2 oz Prometheus Springs pomegranate black pepper water
1/2 oz black pepper simple syrup (*)
1/4 oz lemon juice
1/2 bottle Sanbitter

Fill glass with ice.
Add first 4 ingredients and stir well
Top alco-null glass with Sanbitter
Garnish: Add lite cube, dry ice, and yerba mate straw

REKARRI STARBURST (Talaxian) at Quark's Qantina



A house favorite. Cucumber-like jibelian berry juice, floral moonblossom spirit, and vodka combine to create this festive Talaxian beverage.

ALCOHOLIC version
1 oz jibelian berry juice (cucumber juice extract (+)
1.5 oz Moonblossom spirit (St Germaine elderflower liqueur)
1/4 oz lime juice
3 oz Tombo Shochu

ALCO-NULL version
1 oz jibelian berry juice (cucumber juice extract (+)
2 oz moonblossom syrup (elderflower syrup)
1/4 oz lime juice
4-5 oz jibelian berry soda (cucumber soda)

Combine all but soda in shaker with ice.
Shake vigorously for 10 seconds
Strain into glass
Top with soda
Garnish: caviar lime balls and green glow straw



RISAN MAI-TAI at Quark's Qantina



Mixed from Risan rum, traggle liqueur and synth Saurian brandy this is a classic Mai-Tai for all seasons, not just the Festival of the Moon.

ALCOHOLIC version
2 oz Pampero Aniversario aged rum
1/4 oz Cointreau
1 oz lemon-lime juice
1 oz simple syrup
1 oz pineapple juice
1/4 oz grenadine
1/4 oz orgeat

ALCO-NULL version
2 oz pineapple green tea
2 oz orange juice
1/2 oz lemon-lime juice
1/2 oz maple syrup
1/2 oz grenadine
1/4 oz orgeat
1 dropper maple bitters

Combine ingredients in shaker with ice.
Shake vigorously for 10 seconds
Pour WITH ICE into glass
Garnish: kiwano and kumquat on tall stick



ROCKET FUEL (Terran) at Quark's Qantina



Blast off with this turbo boost of whiskey and gingerbread syrup.

ALCOHOLIC version
2 oz simple syrup
1/4 tsp. gingerbread flavor extract
dash maple bitters
4 oz Stranahan's Colorado Whiskey

Combine ingredients in shaker with ice.
Shake vigorously for 10 seconds
Strain into glass
Garnish: Dry Ice and yerba mate straw

TALARIAN BLOODY Q'MAIRE at Quark's Qantina



A signature drink named for the famous ship, the Bloody Q'Maire boasts spicy-sweet Talerian tomato juice and house-infused Malkothian spirits.

ALCOHOLIC version
balsamic vinegar
smoked salt
tomato juice macerated with balsamic, garlic, and smoked salt for 3 days
1.5 oz tomato vodka
1/4 oz lemon juice
dash celery bitters

ALCO-NULL version
balsamic vinegar
smoked salt
tomato juice macerated with balsamic, garlic, and smoked salt for 3 days
1/4 oz lemon juice
dash celery bitters

Rim glass with balsamic and roll in smoked salt.
Combine ingredients in shaker with ice.

THOLIAN LEMONADE at Quark's Qantina



Who knew the Tholians had the best lemonade recipe in the Alpha Quadrant.

ALCO-NULL version
3 oz targ milk (coconut milk)
2 oz lime juice
3/4 oz pineapple juice
1/2 oz orgeat

Combine ingredients in shaker with ice.
Shake vigorously for 10 seconds
Strain into glass
Garnish: blood orange slice



TRANYA at Quark's Qantina



Even grapefruit-haters love this addictive mixture of floral moonblossom spirit and fruity Syrup of Squill. Warning, Balok couldn't get enough of it.

ALCOHOLIC version
1.5 oz Moonblossom spirit (St. Germain elderflower liqueur)
1 oz syrup of Squill (X-rated vodka)
1.5 oz pink grapefruit juice
dash grapefruit bitters
pink Calaman sherry (champagne or prosesso)

ALCO-NULL version
1 oz moonblossom syrup (elderflower syrup)
4 oz pink grapefruit juice
2 oz pink grapefruit soda

Combine all but last ingredient in shaker with ice.
Shake vigorously for 10 seconds
Strain into glass and top with fizz
Garnish: blood orange twist



VULCAN PON FARR POTION at Quark's Qantina



A passionate marriage of herbal Vulcan port, chocolaty Ktarian liqueur and creamy schplicht will ease anyone through the throes of Pon Farr.

ALCOHOLIC version
1.5 oz Vulcan port (Chartreuse green VEP)
1 oz dark chocolate liqueur
1 oz schplict (cream)
dash chocolate bitters

Combine ingredients in shaker with ice.
Shake GENTLY for 10 seconds
Strain into glass
Garnish: angelica



WARGARITA (Klingon) at Quark's Qantina



Prove your authenticity to your fellow Klingons! This combination of silverstar spirit, lime, and genuine Warnog ale - not replicated ale - is a tradition at Quark's Qantina.

ALCOHOLIC version
1 oz silver tequila
1/4 oz lime juice
1/2 oz simple syrup
1.5 oz Warnog (Duvel Belgian ale)

Combine ingredients EXCEPT BEER in shaker with ice.
Shake vigorously for 10 seconds
Strain into glass, add beer and stir gently
Garnish: lime foam



WARRIOR's MARTINI (Klingon) at Quark's Qantina



TlhIngan gin, prune juice, jacarine juice and hot rekja, the true test of Klingon warrior’s prowess!

ALCOHOLIC version
2 oz tlhIngan gin (Farmer's gin)
1.5 oz prune juice
scant 1/4 oz lemon juice
1 drop cayenne flavor extract

ALCO-NULL version
1 oz prune juice
1/4 oz lemon juice
drop cayenne flavor extract

Combine ingredients in shaker with ice.

Strain into glass
